Speaking of fiber, green beans are wonderful sources. Plus, they have lots of proteins, carotenoids, and anti-oxidants with only a small number of calories. Nutrients in green beans are described as being anticarcinogenic, assisting the prevention and even the stopping the spread of some cancers throughout the body. (4, 5, 6)] Additionally, peppers help fight inflammation, too, with their anti-oxidants. Raw and roasted peppers offer anti-oxidant benefits. Roasting may increase or decrease those benefits depending on the pepper type and stage of their growth.
